A note I'd saved before, revisited once again. Things I'd put off with phrases like 'after the holidays,' 'once Chuseok is over,' 'next week' are all waiting for me.

Add 1 tbsp vinegar to boiling water and poach the egg.

Slice the onion into 1.5cm-thick rounds and pan-fry in oil. The onion will fall apart easily, so don't flip it - just let it cook.

Over low heat, brush on the sauce a little at a time and cook for 2-3 minutes. The sauce contains sugar, so it will burn if the heat is too high.

Over the rice, place the onion, julienned perilla leaves, the poached egg from step 1, and a drizzle of sesame oil.
