Before bed, I put some wilting spinach in water and it perked right back up.
Sadly, I trim off and toss the spinach roots, which are rich in iron and polyphenols.
Surprisingly, the secret behind great Korean-style pasta places is oyster sauce. Italy would be horrified to hear that, but it's true. Today I used fish sauce instead. It doesn't bring quite the same umami as oyster sauce, but it's still excellent.
1. Boil the spaghetti in salted water. Meanwhile,
2. Wash 4-5 spinach plants under running water and cut off just the roots.
3. Heat olive oil in a pan, sauté the thinly sliced garlic and pepperoncino, then add the pasta, 1 cup pasta water, 1T fish sauce, and spinach, and mix well.
4. Emulsify (mantecare), plate it, and top with parmesan cheese and pepper.
