This summer's task is to read the shade of someone you don't know
(Kim Gyeong-in, 'This Summer's Task')
Right in the middle of COVID, around this time in '21, outside Kyobo Bookstore — the #GwanghwamunGeulpan (Gwanghwamun banner poem), a thing that doesn't change no matter how much time passes.
Today's breakfast is a very summery lemon parsley burrata toast.
1. Brush a pan with olive oil and toast the bread until hot.
2. Spread burrata on the bread, spoon over the dressing, and finish with mint.
*Dressing: 6 parts olive oil, 1 part herbs, 6 parts lemon juice, a little minced garlic, chopped parsley, salt, pepper, and lemon zest to taste.
(In place of chopped parsley, I'd recommend basil or perilla leaves, sliced into long strips rather than chopped.)
