Green bananas 🤔
Compared to yellow bananas, green bananas have about 20 times more resistant starch, making them excellent for blood sugar management. They're also rich in fiber, which promotes gut activity, and their low sugar content makes them very effective for weight loss too. Boiled, they taste a lot like potato.
Served with a spicy, creamy red pesto, about 550kcal, Calabrese Octopus & Green Banana Salad.
Ingredients
2 green bananas, 150g pre-cooked octopus, 80g Korean radish, 5-6 cloves garlic, 3 radishes, a little sage, 1T red pesto (Pesto alla Calabrese), 10g butter
Steps
1. Bring 600ml water and 80g radish to a boil in a pot. The diastase in the radish helps tenderize the octopus. Once it's boiling, add the thawed octopus, blanch for 1 minute, then plunge into cold water.
2. Trim both ends off the green bananas, halve them, boil in water, then peel and cut into bite-sized pieces.
3. Drizzle olive oil in a pan and sauté the garlic, then add the boiled green banana from step 2 and the halved radishes, sprinkle with salt, pepper, and paprika powder, and sauté.
4. In a pan, add olive oil, 10g butter, and a little sage, sprinkle with salt, pepper, and paprika powder, and sear the octopus from step 1 on both sides.
5. Spread the red pesto (Pesto alla Calabrese) on a plate, arrange the cooked octopus, garlic, and green banana on top, and sprinkle with chopped parsley.
