I'm feeling more and more change in my life as this professional discipline settles into my body. To describe something well, it has to be conveyed well, so I try to really feel, see, sense, and taste things — to do things I've never done before. I think I've ended up braver and more adventurous than my natural temperament would suggest. The professional discipline, the training discipline itself, changed the nature of the medium. For the crispiest, crunchiest bite, add the dressing right before eating. Cut a store-bought chicken breast lengthwise in half and pan-fry it in olive oil until golden on both sides.
