20201204, Around this time every year, you can easily spot fruit-truck signs advertising "ggyul" (a portmanteau of tangerine + honey). Just how sweet do they have to be to earn that name? #ggyul And sitting right next to them, nine times out of ten, are #honeyapples. When you cut an apple open, that translucent patch inside we call "honey" is actually a physiological disorder called water core (or glassiness) — something you'd never find in an apple grown under normal conditions. I cut the apple open. No honey inside. A little disappointed, I julienne it anyway and soak it in honey water. Julienne the kohlrabi too, then plate the honey-water-soaked apple together with today's companion, kohlrabi, pour over a dressing of olive oil, white wine vinegar, and whole-grain mustard, and finish with pepper.
