Carrot Rapée Toast

Julienne the carrot, sprinkle with parsley, plenty of pepper, and a vinaigrette dressing to make the rapée, then let it sit until it wilts a little.
Spread ricotta cheese generously on bread toasted on both sides, and top with the rapée. #carrotrapéetoast

Toast the bread in a pan on both sides until crisp.

Julienne the carrot, pour over the dressing, toss well, and let sit for about 10 minutes.
