Mango sticky rice, or Khao Neeo Mamuang — #mangostickyrice is a Thai dessert. To Korean eyes the combination of rice and fruit looks pretty bizarre, but eaten with a dessert mindset, it's sweet yet filling, leaving you feeling rich in body and mind. On the other hand, it makes me think that the rice cakes we eat here, in Thailand, evolved in this direction by meeting tropical fruit.
Soak 100g glutinous rice in water before bed. In the morning, steam for 15 minutes.
Meanwhile, pour a pack/can of coconut milk into a pot and simmer over low heat with salt. (When eating as dessert I'd add about 3 of sugar, but skipping it since this is breakfast — still sweet even without it.)
In a bowl, add the glutinous rice, pour in 1/2 of the simmered coconut milk, mix thoroughly, and let sit for a bit.
Add a cornstarch slurry (1 cornstarch, 2 water) to the remaining coconut milk and simmer gently.
Plate it using a mousse ring, add the glutinous rice, then top with mango. Pour the coconut milk over.
