Give me radish!
The texture is similar to a potato pancake, but with half the calories and carbs, and rich in fiber and antioxidants. About 400kcal, Parmesan Cheese Korean Radish Pancake.
Ingredients
300g Korean radish, 3-4 sheets gamtae (sea lettuce laver), 3T starch, 2T parmesan cheese, a little chopped scallion, (sauce) 1T soy sauce, 1T mirin
Steps
1. Wash the radish well and grate it finely, skin on.
2. Drizzle oil in a pan and cook the grated radish from step 1 with 3T starch (meant to add 2T parmesan here but forgot) and a little chopped scallion. (This is more visually interesting than mixing everything in beforehand.)
3. Pour oil around the edges and pan-fry both sides until crisp. (Added the parmesan I'd forgotten.)
4. Mix 2T soy sauce and 2T mirin, pour it in, and cook a bit longer.
5. Wrap in gamtae to eat.
