The broth of this lemon somen resembles, in some indescribable way, the mild, subtle broth of Pyongyang naengmyeon. It's addictive.
Served with prosciutto, about 425kcal, Lemon Somen.
Ingredients
1 serving somen noodles, 1/2 lemon, 10g prosciutto, a little parsley, (broth) 500ml water, 1T hondashi, 1T tsuyu, 2t white wine vinegar, a pinch of salt
Steps
1. Boil the somen in a pot of water, adding cold water about three times as it cooks. Drain and rinse in cold water. Now it's nice and chewy.
2. Mix 500ml water with 1T hondashi, 1T tsuyu, 2t white wine vinegar, and a pinch of salt.
3. Pour the broth from step 2 into a bowl, add the somen from step 1, and top with thinly sliced lemon, prosciutto, and parsley.
