Pan con Tomate style — said to revive even stale bread — I split the world's most beautiful tomato in half, rub it onto the inside of the baguette, and drizzle with olive oil.
I beat 2 eggs, add brie cheese and salt to make scrambled eggs, and layer them between the baguette for a simple #BaguetteSandwich
I signed my mother up for a watercolor and colored-pencil class for seniors, thinking she'd enjoy it, but after going once she sighed that everyone else there was young and she couldn't keep up with the pace. I told her to take it slow and not worry about doing it perfectly. I think I remember hearing something similar from her when I was young.
Ingredients
- 1/2 baguette
- 1/2 tomato
- 2 eggs
- a pinch of salt
- 1T olive oil
- 10g brie cheese
Steps
1. Cut the baguette in half, brush the cut side with olive oil, and toast in a pan.
2. Cut the tomato in half and rub it onto the cut side of the baguette.
3. Beat 2 eggs, pour into the pan, melt in the brie cheese, add a pinch of salt, and make scrambled eggs.
4. Top the baguette from step 1 with the scrambled eggs from step 3 and cover with the other half of the baguette.
