A big sweet pumpkin I bought a week ago had been on my mind the whole time. While thinking about how best to eat it, I remembered a braised pumpkin with red beans from a macrobiotic recipe I'd seen. But I had no red beans, so instead I used Bibibig - the popsicle I'd seen somewhere advertised as containing a whopping 35% red beans. A dessert of braised pumpkin with red beans, 210kcal. It's #BibiBiotic.
👆Macrobiotic is a compound of the Greek 'macro,' meaning 'large,' and 'biotic,' meaning 'life' - it refers to a nature-friendly way of eating for health and longevity.
1. Cut off the pumpkin skin, chop into bite-sized pieces, cover with plastic wrap, and microwave for 3 minutes.
2. Pour 50ml water into a pan, add 1/2t minced ginger and 1/2t soy sauce, mix evenly, then add the pumpkin from step 1 and 1 Bibibig popsicle, and braise for about 5 minutes.
3. Once the liquid has reduced down, add the mixed nuts and mix evenly.
4. Plate it and top with a little honey and 1T Greek yogurt.
