No guanciale, no pecorino, but let's give a (nearly) authentic carbonara a try anyway
In a large bowl, whisk parmesan cheese, egg yolks, and pepper together until nicely smooth — that's the carbonara sauce, set it aside.
Pan-fry thick-cut #sogeumjipdeli bacon, boil the pasta in salted, salted water, then pour it into the pan. Add a little pasta water too.
