Short on potato starch, I threw in tapioca starch as a quick fix, and lucky me - chewiness +58,000%. Makes about 20 potato balls (30g each); the potato balls alone are 1,200kcal, and the sauce is about 100kcal. Since it's a holiday, let's share it with several people.

Ingredients
400g red potatoes, 200g potato starch (I was short on potato starch, so I used 130g potato starch mixed with 70g tapioca starch), 150g water, a pinch of salt, (sauce) 1T chili garlic oil (chili oil works too), 2T soy sauce, 2T apple cider vinegar, 1T sesame seeds, 1t sesame oil, a little parsley
Steps
1. Give the potatoes a light rinse, steam them, then take them out and peel while still hot.
2. Grate the potatoes from step 1 into a mixing bowl, add the potato starch and water, and mix well. Shape into balls and steam for 15 minutes. (About 30g each)
3. Make the sauce by mixing 1T chili garlic oil (chili oil works too), 2T soy sauce, 2T apple cider vinegar, 1T sesame seeds, 1t sesame oil, and a little chopped parsley (cilantro would be great here, but I didn't have any).
4. Put the chopped cabbage on a plate, add the potato balls from step 2, and drizzle with the sauce from step 3 to eat.
