When you lose someone you love, your chest feels hollowed out, aching with emptiness. The only way to avoid that is to never love anything at all - but then you'd have to live your whole life feeling empty, and wouldn't that be worse? That's what Grandfather used to say.

A story that holds up no matter what you swap in for "someone you love" - say, "meat"
Melt a lump of butter in a pan to coat it, then lay in a piece of chuck flap steak. Sear once on each side only, remove, then season with salt salt, pepper pepper, and grill the scallion.

Steps
01
Melt 5g butter in a pan and sear the chuck flap steak to medium-well. Once cooked, set it aside to rest.
02
In the same pan the steak was seared in, add the scallion and season with salt and pepper, then grill.
03
Slice the steak from step 1 into bite-sized pieces, and cut the scallion the same size.
04
Plate the scallion first, then the steak on top, and finish with 1 tsp whole grain mustard.
