Prepare 200g of raw salmon fillet. It varies by person, but that's just a touch short of 2 servings. You'll need a little scallion. Beyond that, prepare mirin, sesame oil, chicken stock, seasoned salt, and pepper. It's fine if you're missing one or two of these — as long as the salmon itself tastes good, that's what matters.
1. Cut the salmon into long strips, put it in a bowl with the scallion (white part), 2T mirin, 2T sesame oil, 1/2t chicken stock, 1/2t seasoned salt, and a little pepper, and mix well.
2. Since I won't be using sushi vinegar today, season the salmon to taste with the (unbeatable) seasoned salt.
