Made with chicken and egg, and so named for parent (親) and child (子) - about 445kcal per serving, Oyakodon (親子丼).
1. Make the sauce. Combine 2T soy sauce, 2T mirin, 1T sugar, and 2t hondashi and mix evenly.
2. Pat the chicken dry with a paper towel, then heat oil in a pan and cook both sides.
3. Once the chicken turns golden, push it to one side, add the thinly sliced onion and sauté, then pour in the sauce from step 1 and mix evenly.
4. Turn the heat down low, then pour in the beaten eggs.
5. Serve over rice. Some chopped scallion would be nice, but I'm skipping it today~
