Atomix always flies in soy sauces made by master craftsman Gi Sun-do in Damyang, Jeollanam-do — apparently an Atomix server can even tell you the different types of traditional Korean doenjang and soy sauce. That, in turn, becomes part of the guests' own sophistication.

A far cry from today's insight, but for breakfast anyway —
chicken alone didn't feel like enough, so I skewered it with scallion and tomato. Salt, pepper pepper pepper pepper — the kind of breakfast that makes you want a drink, but I decided to hold off this week.
