In Japanese, it's called tororo soba. Slip in one little typo and it turns into the world's cutest noodle dish: #Totoro
1. Boil 400ml water with 1 sheet of dried kelp, then remove the kelp. Mix in 3T tsuyu, 3T mirin, and 3T sugar, pour into the kelp broth, and simmer briefly. (It comes out a little sweet, so adjust the sugar to your taste,)
2. Mince the scallions, grate the mountain yam, and cut the seaweed into strips.
3. Add the buckwheat noodles and a pinch of salt to a pot of boiling water. Once it boils up, add cold water about three times while cooking.
4. Put the buckwheat noodles in a bowl, pour over the broth from step 1, and top with the grated yam, scallions, seaweed, and a glistening egg yolk to finish.
