Even with a store-bought pancake mix, or a product like the one I had today where you just add water or milk and shake to make the batter, pancakes are (if you want to do it right) actually a surprisingly demanding breakfast that calls for careful heat control and a fair bit of patience.
It's a bit like casting a line into a still lake and sitting there blankly, and when someone passing by asks 'what are you fishing for,' instead of answering 'oh, just fishing for time,' you could just as naturally say 'oh, just cooking pancakes' — that kind of feeling. That's what crossed my mind while pouring batter into the pan and zoning out.
Over gentle heat, add oil and coat the pan with a paper towel. Leave it be for about 5 minutes.
Pour water into the store-bought pancake mix, shake it up, ladle a scoop onto the pan, and wait patiently. Just as your patience is about to run out, flip it and wait through another stretch of patience. That's how you finally get one finished pancake.
Top with a knob of butter and a generous pour of maple syrup for extra moistness and sweetness~
