Farrotto instead of risotto
Risotto made with farro is called "farrotto" in Italy. It has a far more fun, chewy texture than rice.

"All'onda" is Italian for "like a wave," a phrase used to describe the right consistency for a well-made risotto. Plate it, give the bottom a couple of light taps with your palm, and if the risotto slowly ripples outward and settles flat, you've nailed the all'onda consistency - but mine didn't budge an inch, so I think I failed at getting the consistency right today.
