20251021 #breakfastdiary day 1539, 8°C/mostly cloudy, 20min/exercise (M)
Since this is a cheesecake concept with no actual cheese, blending the oatmeal finely in a blender might work nicely for the texture.
I baked it at 180°C for 20 minutes, then raised it to 200°C for 15 more minutes. I think baking at 200°C for 20 minutes straight would be better. (Every oven's heat output differs, so keep an eye on it.)
An approx. 470kcal cheese-free blueberry cheesecake made with Greek yogurt and eggs
Ingredients
170g Greek yogurt, 2 eggs, 30g oatmeal, 1T honey, 1t vanilla extract, a little blueberries
Steps
1. In a mixing bowl, combine 170g Greek yogurt, 2 eggs, 30g oatmeal, 1T honey, and 1t vanilla extract, and mix thoroughly.
2. Line an oven dish with parchment paper, pour in the batter from step 1, add blueberries, and bake at 180°C for 20 minutes. After checking at 20 minutes it wasn't done, so I raised it to 200°C and baked 15 minutes more.
