The name of this dish is Chickpea-Spinach-Onion-Tomato Salad (in alphabetical order).
1. Boil chickpeas that were soaked overnight before bed. (Tasted one to check — yep, delicious.)
2. In a heated pan with olive oil, blanch the onion, then add cherry tomatoes, spinach, and chickpeas in that order and blanch together. (Onion turns mushy if blanched too long, so it might be better to blanch it separately and com·bine them later. Scoring the cherry tomatoes cuts down the cooking time. Since the dressing is waiting in the wings, skip the salt here and just add a little pepper.)
3. Mix olive oil 3, wine vinegar 1, and whole-grain mustard to taste (usually about 1/4) for the dressing, drizzle it on, and finish with pepper, the #goldenrule.
