Notes

20221031, #breakfastdiary 582, 9°C/occasionally cloudy, 17min/exercise The word 'panic' traces back to Pan, the goat-god of Greek mythology. Whether it's the pecorino cheese in the pasta or the unfortunate incident from a couple of days ago, there's a sharp, sour taste in the air. If the emotion called panic had a flavor, I imagine it would taste something like this. Boil the pasta in salted water. In a pan, melt a knob of butter, add garlic garlic, grate in pecorino cheese, and warm it through, then add a dollop of Greek yogurt. Pour the Greek yogurt sauce over the boiled pasta, finish with pepper pepper pepper, #GreekYogurtPasta

Steps

  1. 01

Add 1/2 tbsp salt to 1L boiling water and cook the pasta according to the package timing. Reserve 4 tbsp of pasta water before draining.

  2. 02

Slice or mince the garlic. Grate the pecorino finely.

  3. 03

Melt the butter in a pan and sauté the garlic over low heat for 1 minute, until fragrant.

  4. 04

Add 2 tbsp of the pasta water and the pecorino, and warm through, stirring until the cheese melts.

  5. 05

Turn off the heat, let it cool for 1 minute, then stir in the Greek yogurt until smooth. If it's too thick, adjust the consistency with the reserved pasta water.

  6. 06

Pour the sauce from step 5 over the cooked pasta and finish with a generous grind of pepper.
