Eggplant with Quinoa & Greek Yogurt

Somehow that adds up to four eggplant meals in a row through this morning — #eggplant I grill the prettiest eggplant in the world in a pan with olive oil, then top it with quinoa, Greek yogurt, and dressing to make #wholegrilledeggplantwithgreekyogurt.
