Apparently the character 金 (gold) looks similar to a pyramid shape, so it became a tower shaped like the character 金, hence 金字塔. Today's breakfast is slices of potato tossed in a butter and garlic sauce, stacked layer by layer like a #potatotower, then roasted in the oven to make #roastedpotato with the layers still visible. In modern usage, geumjatap is used to mean 'a great achievement to be remembered by later generations' rather than its original meaning, and honestly that phrase fits this dish's flavor really well.

In Korea too, up until the 1920s the term referred to the actual pyramid structure, but from the 1930s it started being used to mean 'a great achievement to be remembered by later generations,' and by now it seems the original meaning of the pyramid structure has nearly vanished, leaving only the meaning of a great achievement. There must be some reason it's used this way specifically in Korea, but I have no way of knowing.
