Notes

20241020 #breakfastdiary 1211, 17°C/clear, 25min/exercise(S, M) Translate "pyramid" into Chinese and you get 金字塔 (geum-ja-tap), literally "gold-character tower" - because the character 金 (gold) happens to look like a pyramid, giving it the shape-based name "tower shaped like the character for gold." Today's breakfast slices potatoes thin, tosses them in a butter-and-garlic sauce, then stacks them neatly - like a #potatotower - and bakes them in the oven for a #roastedpotato with all its layers intact. In modern usage, geumjatap has shifted away from its literal meaning toward "an outstanding achievement that will be remembered for generations," which fits this dish's flavor rather well. In Korea too, up until the 1920s the word referred to the architectural pyramid, but starting in the 1930s it began being used to mean "an outstanding achievement for posterity," and by now the original architectural sense has nearly vanished, leaving only the figurative meaning. There's probably some reason this shift happened so distinctly in Korea, but there's no way to know for sure.

Steps

  1. 01

In a pan, combine 2 tbsp butter, 2 tsp minced garlic, 2 tsp minced parsley, 1/4 tsp salt, and 1/4 tsp pepper, and simmer slowly over low heat to make the sauce.

  2. 02

Peel the potatoes and slice them on a mandoline, then place in a mixing bowl, pour in the sauce from step 1, and toss well.

  3. 03

Brush a muffin tin with olive oil and stack the potatoes about halfway up. Add grated cheese, then stack more potatoes on top. Drizzle with a little olive oil.

  4. 04

Bake at 210°C for 30 minutes. (Check doneness with a chopstick around the 20-minute mark~)

  5. 05

Plate and top with Maldon salt before eating.
