Turning the imagination in my notepad into reality, the second breakfast begins. It's time to prep and cook the ingredients exactly as written in the recipe I jotted down, and actually taste it. Sadly, though, things never turn out exactly as written in the notepad. The vegetable I meant to boil ended up merely blanched in hot water for one reason or another, and whether because of that or because I didn't leave it in the steamer long enough, once it finished cooking it wouldn't hold its shape and fell apart. So I chopped it up and used it as a topping instead.
Some days I taste it and it's too salty, so I add a little water and taste again - only to find it's now too bland. No, that's not quite it either. What do I even call this? A bizarre taste. Sadly, there's no room to start over from scratch, so I salvage it with 1t chicken stock - the ultimate cheat code. Of course, the deep flavor of the original ingredients is gone by then. It ends up tasting like broccoli eaten with chogochujang, but there's nothing to be done. Anyway, that's how I end up eating breakfast twice in one day.
(Na-jusik, "my breakfast" - though in Everyday, Breakfast the default is three breakfasts a day)
It didn't turn out the way I wrote it in my notes, but maybe that's exactly why it tasted even better.
Using up the leftover sweet potatoes my aunt sent me, 550kcal, Sweet Potato Greek Yogurt Bowl.
Ingredients
about 300g sweet potato, 2T Greek yogurt, 1T hemp seeds, 1T almonds, a little peanut butter, (special touch) everything bagel seasoning
Steps
1. Wash the sweet potatoes well, coat with olive oil, and bake at 200°C (400°F) for 30 minutes, flipping once halfway.
2. Cut half the sweet potato into 1cm cubes and bake once more at 180°C (350°F) for 7 minutes.
3. Meanwhile, mash the remaining sweet potato in a tray, then mix in 2T Greek yogurt and 1T hemp seeds.
4. Spoon the mixture from step 3 into a bowl, top with the roasted sweet potato cubes from step 2, pan-toasted almonds, and a little peanut butter. A sprinkle of everything bagel seasoning (salt, sesame seeds, black sesame seeds) nails the seasoning perfectly.
