I'm no vegan myself, but I do lean toward vegetables over meat. People come to veganism for all kinds of reasons — religion, ethics, the environment, personal trauma — and if I ever did choose that path, I suspect it would be for environmental reasons rather than the question of life itself that haunts Yeong-hye in The Vegetarian. #AnimalRights
A very simple vegan breakfast today. I thaw some black bean #tempeh I bought last week at #Marche in water for a bit, then sear it in a pan with a little olive oil. They say all kinds of sauces go well with it, but today it's #srirachasauce
*Tempeh is an Indonesian food made by fermenting beans — closer to cheonggukjang than to tofu. The beans are soaked, hulled, lightly cooked, then fermented for several days with a mold called Rhizopus. As the mycelium grows in between the beans it binds them into a firm block that's not only high in protein but rich in saponins, isoflavones, amino acids, vitamins, and dietary fiber.
