I bought this vegetable box, including this sweet pumpkin, from a company whose mission of fixing that market resonated with me. Microwave the sweet pumpkin for 2 minutes, then cut off the stem end and scoop out the insides. Fill the inside with whatever you like — chopped mushrooms, carrot, onion, etc. — add shredded cheese and an egg, then cover with more shredded cheese. (Add more salt to taste.) Microwave again for 5 minutes. ☠️Be sure to pop the egg yolk beforehand. There's a service called #uglyus @uglyus.market that does regular deliveries of eco-friendly/organic produce that got unfairly rejected for being "ugly." I ordered a (mostly) random vegetable box and got a variety of vegetables. Cooking breakfast with whatever vegetables I'm given feels like completing a mission. Yesterday was water spinach, today, sweet pumpkin mission complete!
