Roasted sweet pumpkin has shown up in my breakfasts quite a few times, and it's constantly being improved based on Kaizen. Ingredients

1 sweet pumpkin/kabocha (150g), 1t ghee, 1T walnuts, pepper, herbs, parmesan cheese, (tomato sauce) 1/4 onion, 2 cloves garlic, 1 can whole tomatoes, salt, pepper, herbs (1t each)

Steps

1. Heat olive oil in a pot, sauté the minced garlic and onion, then add the can of whole tomatoes. Add salt, pepper, and herbs and simmer gently. (This is tomato sauce I made last weekend — obviously a store-bought sauce works too.) 2. Toast the walnuts in a pan. This bumps up the nuttiness by about a million times. 3. Melt butter in a heated pan, add pepper and herbs, and roast the pumpkin. 4.
