Tofu Cream Toast

20240214 #breakfastdiary 974, 8°C/partly cloudy, 21min/workout(Y) Excited, I pulled out the cheese grater I bought yesterday, but it seemed shy on its first outing — the lemon zest kept coming off in clumps instead of fine shreds. I guess getting used to something new takes a little time. For me, and for you too. Heat the pan, mist the baguettine campagne @baguettine.seoul with olive oil, and toast the bread. Roughly tear a block of pan-fried tofu by hand, then blend it with lemon zest, lemon juice (half a lemon), vanilla oil, 1 olive oil, a pinch of salt, and honey. (Leave out the vanilla oil and it just tastes plain tofu-ish, so I'd recommend keeping it in.) Pipe the tofu cream onto the bread, then top with lemon zest, maple syrup, and a good crack of pepper.
