A slightly late breakfast — only about 10 minutes later than usual — and yet the sunlight falling across the table feels wondrous.
You'll need 4 (tablespoons of) lentils and 2 small sweet potatoes. Rye crackers and parsley or celery leaves are nice to have too.
Soak the lentils in water for 30 minutes, then boil in salted water for 10-15 minutes.
Add 1 (tablespoon of) milk and mash the boiled or roasted sweet potato. Drizzle with a little olive oil.
Plate the lentils and top with the sweet potato.
Crumble rye crackers over the sweet potato. Or rather, stick them in.
Scatter chopped celery leaves over it.
👆If you don't like it too plain, drizzle on a little vinaigrette dressing.

2. Steam the sweet potatoes.
3. In a mixing bowl, mash the peeled sweet potatoes with 1T milk and 1/2T olive oil.
4. Plate the lentils from step 1 and top with the mashed sweet potato from step 3.
5. Crumble rye crackers and stick them into the sweet potato from step 4, and add a little celery leaf.
Drizzle with a little vinaigrette dressing to taste.
