Ingredients
1/2 bowl multigrain rice, 150g Korean yam, 1 egg yolk, scallion, sesame seeds and sesame oil, a little, (dressing) 3T tsuyu, 2T mirin, 2T sugar, 1T vinegar
Steps
1. Peel the yam with a peeler, then slice thin with a mandoline.
2. Mix 3T tsuyu, 2T mirin, 2T sugar, and 1T vinegar well.
3. Add the yam from step 1 to step 2, mix well, and let it sit for a moment.
4. Top the multigrain rice with the yam from step 3, the egg yolk, scallion (no chives on hand), sesame seeds, and a little sesame oil.
