Hesitation is usually seen as a flaw to overcome rather than a strength. But neuroscience tells us hesitation is actually a fundamental, active function of the brain - one that helps us make fewer mistakes as we navigate an uncertain world. Given that abnormalities in the basal ganglia, where "hesitation neurons" live, are linked to an inability to suppress impulsivity, as in obsession or addiction, it becomes clear that charging ahead without any hesitation at all might actually be the bigger problem.
(Kim Chae-yeon, In Defense of Hesitation)
A warm comfort for people who hesitate a lot in daily life. Also, yesterday's post that I hesitated over and missed - turned green from mixing mentaiko and avocado - yesterday's 395kcal, one serving, Mentaiko Avocado Cream Pasta

Steps
01
Add a little salt to boiling water and cook the short pasta according to the package time. Set aside 1 tbsp of pasta water before draining.
02
In a bowl, combine the avocado, 1/2 tbsp lemon juice, half the mentaiko, and 1 tbsp pasta water, and mash finely with a fork to make the cream sauce.
03
Thinly slice the shiitake mushrooms and mince the garlic. Heat 1 tsp olive oil in a pan and sauté the garlic and shiitake mushrooms until golden.
04
Turn off the heat, add the pasta from step 1 and the sauce from step 2, and toss. If it's too thick, add a little more pasta water to loosen it.
05
Plate and top with the remaining mentaiko, julienned perilla leaves, and pepper.
