Ingredients
1/2 radish, a handful of pine nuts, a little parsley, balsamic, green pepper (regular pepper works too), (dressing) 2T olive oil, 1T white wine vinegar, 1t whole grain mustard
Steps
1. Wash the radish thoroughly and cut into 2cm-thick slices. The top part of the radish (near the greens) is sweeter, so it's better for salads.
2. Toast a handful of pine nuts in a hot pan until golden and fragrant.
3. Remove the pine nuts, add olive oil to the pan, and sear the radish, browning all four sides evenly.
4. Plate the radish, top with the pine nuts, drizzle with vinaigrette dressing, and add chopped parsley. Finish with a little balsamic vinegar and green pepper.
