This one carries the rather grand title 'I tend to aim for breakfast pairings.' Actual pairing experts would probably laugh at that, but still. There's a link in my profile. Please give it a read~ Made a mint dressing. Might be more accurate to call it a mint pesto. It's great on its own with roasted romaine, but I added smoky, savory, umami-rich smoked salmon, which contrasts nicely with the mint's freshness. Sometimes combining opposite flavors like this is exactly what pairing is about. Called it a Contrasting Pairing of mint dressing and smoked salmon, and it actually sounds pretty convincing — a 453kcal #baby romaine salad

Ingredients

1 baby romaine, a little smoked salmon and walnuts, (mint dressing) 1/2 cup mint, 3T olive oil, 1T white wine vinegar, 1T whole grain mustard, a pinch of salt, (just a hint of) honey

Steps

1. Put the mint, 3T olive oil, 1T white wine vinegar, 1T whole grain mustard, a pinch of salt, and just a hint of honey into a mortar and (since the amount isn't much today) crush together to make the mint dressing. 2. Rinse the baby romaine under running water, cut in half, and roast in an oiled pan until golden. 3. Place the baby romaine on a plate and top with the smoked salmon. 4. Drizzle over the mint dressing. Add a little chopped walnut and pepper too~
