Glasswort (sebal-namul) is a sea vegetable that grows in salt marshes and has an unusually salty taste. Squint at it just right and it almost looks like pine needles. Only 278kcal, a small and cute glasswort salad with shiitake
Ingredients
A little glasswort (honestly, how do you even quantify this), 3 shiitake mushrooms, 1T olive oil, (dressing) 1T each of sesame oil, soy sauce, white wine vinegar, plum syrup, and sesame seeds
Steps
1. Rinse the glasswort under running water and shake off the excess water.
2. Mix 1T each of sesame oil, soy sauce, white wine vinegar, plum syrup, and sesame seeds to make the dressing.
3. Slice the shiitake mushrooms thick for a chewy bite, and sauté in a hot pan with just olive oil.
4. In a mixing bowl combine the glasswort and shiitake, pour over the dressing from step 2, and mix evenly.
5. Plate and top with a bit more sesame oil and sesame seeds.
