Apparently red cabbage has 13 times the vitamin A of regular cabbage, so it's not like you should only ever go for red cabbage. Sure, overall red cabbage is more nutrient-dense than regular cabbage, but regular cabbage actually has more fiber, vitamin K, and folate.
That's the reason we need to collaborate, the reason media mix matters, and the reason my mom always told me as a kid to eat a variety of foods.

Ingredients
1 carrot, red cabbage equal in volume to 1 carrot, cabbage, 1/2 apple, (dressing) 2T peanut butter, 2T lemon juice, 1T sesame seeds, 1 clove minced garlic, 1T soy sauce, 1t salt, 4-5T water

1. Slice the cabbage, red cabbage, carrot, and apple with a mandoline or knife.
2. Mix 2T peanut butter, 2T lemon juice, 1T sesame seeds, 1 clove minced garlic, 1T soy sauce, and 1t salt, then add 4-5T water to adjust the consistency.
3. In a mixing bowl, combine everything from step 1, pour over the sauce from step 2, and toss evenly.
4. Plate and finish with parsley and olive oil.
