I'd been waiting several days for the avocado to ripen, but I couldn't wait any longer and just made it. Turns out the mango wasn't quite ripe either, so the flavor's pretty meh overall. I tweaked the original recipe a little, and the dressing ended up kind of in-between too. Anyway, overall #meh avocado mango salad
Ingredients
5 stalks crown daisy (use only the leaves, chew on the stems as you cook), 1 avocado, 1 mango, (dressing) 4T olive oil, 2T lime juice, 1t fish sauce, 1t sugar, salt, pepper, 1t minced garlic, 1t minced shallot
Steps
1. Wash the crown daisy under running water and pick off just the leaves.
2. The avocado still seems a bit underripe, but there's no helping it. Cut in half, remove the pit, and cut into bite-sized pieces.
3. Peel the mango with a grater and cut into pieces similar in size to the avocado.
4. Mix 4T olive oil, 2T lime juice, 1t fish sauce, 1t sugar, salt, pepper, 1t minced garlic, and 1t minced shallot evenly.
5. In a mixing bowl, combine the crown daisy, avocado, and mango with the dressing from step 4 and mix evenly.
6. Plate it up and top with fried shallots. Finish with pepper~
