Notes

20250530 #breakfastdiary 1412, 19°C/clear, 20 min/exercise (M) The Korean phrase "gud-i" ("why bother") carries a hint of some inner standard, will, or stubbornness. "You followed me all this way for no reason" is said when you'd rather they hadn't come. It's the feeling of "you didn't have to..." So when you say "why bother?" to someone putting in real effort, it deflates them. Like when someone who came a long way is met with "why did you even bother coming?" — the energy just drains out. Some people refuse to lose to the phrase "why bother." People who talk back with "of course I need to!" People who defy gravity and leap up anyway. People who won't let emptiness and cynicism drag their body down. In those moments, words like "anyway, without fail, gladly, no matter what" stand right next to "why bother." Kim Jin-hae There are plenty of other cuts of chicken, but choosing the tenderloin anyway, and marinating it in yogurt when it would taste fine just grilled plain — that's a quiet vow to enjoy, no matter what, the single most delicious breakfast in the world. About 600kcal yogurt-marinated chicken tenderloin salad

Ingredients

5 pieces chicken tenderloin, crown daisy, cherry tomatoes, (for marinating) 100g plain yogurt, whole grain mustard, mayonnaise, soy sauce, honey, olive oil, sake (or cooking wine, or rum in a pinch)

Steps

1. To leftover yogurt (about 100g), add 2T whole grain mustard, 1T mayonnaise, 2t soy sauce, 2t honey, 1T olive oil, and (I meant to use cooking wine instead of the original recipe's sake, but I was out) 1T rum, and mix evenly. Set a little aside for the dressing. 2. Trim the connective tissue and tendons off the chicken tenderloin and soak in the yogurt from step 1. It should marinate for about an hour, but there's no time, so just 30 minutes. 3. Sear the marinated chicken tenderloin from step 2 in a hot pan until golden. 4. On a plate, arrange the crown daisy (arugula-esque), cherry tomatoes, and seared chicken tenderloin, then drizzle with the dressing set aside from step 1.
