20240202 #breakfastdiary 963, 0°C/cloudy Vladimir Sofronitsky (1901-1961), a Russian pianist whose name is barely known here, has been drawing attention lately for showing up on both Lim Yunchan's and Cho Seong-jin's playlists at once. Another performer once described his playing like this: 'His piano is like lily of the valley or lilac blooming in early spring. Beautiful, wrapped in mystery. There's something strange living inside his playing.' With that in my ears, I head off to work, a little soothed. Cut broccoli lengthwise, stems included, and blanch in boiling water. (The stems are said to be rich in sulforaphane, which is good for liver health.) Mix 3 olive oil, 1 wine vinegar, and 1/2 wholegrain mustard for a vinaigrette. Plate the broccoli, top with crushed walnuts, shave long parmesan curls over it with a peeler (a potato peeler works fine), and pour over the dressing. From my #myfrenchstylesalad recipe.
