Other recipes using wood ear mushroom tend to be more heavily seasoned, but since this is breakfast, I figured a lighter, lower-resolution dressing would work better. It seems more suited to summer, but surprisingly it doesn't feel out of place even on a snowy day like today. Fighting cold with cold, I guess?

1. Soak the wood ear mushrooms in water the night before, before going to sleep.
2. Blanch the wood ear mushrooms in boiling water for 2-3 minutes, rinse in cold water, and squeeze out the moisture.
3. Cut the 2 tomatoes into wedges.
4. Mix 2T soy sauce, 1T vinegar, and 1T mirin with 1 minced garlic clove to make the dressing.
5. In a mixing bowl, combine the wood ear mushrooms, tomatoes, and dressing, and toss well.
6. Plate it and drizzle with sesame oil and sesame seeds.
