Citrus season is here.
In Samin Nosrat's Salt, Fat, Acid, Heat — Acid chapter, which I first learned about through the Netflix documentary, there's a line: "Acid brings balance and vibrancy to food." Indeed, acidic ingredients like orange or vinegar cut through richness and brighten up flavor. They also aid digestion and help prevent oxidation.
So today, going all in on citrus.
#citrussalad with orange and grapefruit, paired with beet and Greek yogurt
Ingredients
1 grapefruit and 1 orange, 1/4 beet, 2T Greek yogurt, a little pistachio, olive oil, cumin, salt, pepper
Steps
1. Peel the beet, slice thinly with a mandoline, and toss with cumin, salt, and olive oil.
2. Grate the orange and grapefruit zest, then mix in olive oil, salt, and the squeezed juice of the orange and grapefruit to make the dressing.
3. Mix salt and pepper into the Greek yogurt.
4. Plate the Greek yogurt, top with the orange and grapefruit segments, drizzle the dressing from step 2, and sprinkle with chopped pistachio.
