The animals with no words to demand cooling for their barns; the elderly farmers who go out to check on the crops they've tended their whole lives, worried about the midday heat; the workers sorting and delivering packages and working at construction sites — among them especially, migrant workers in vulnerable legal positions — collapse and die. When Seoul flooded in the summer of 2022, poor people living in semi-basement rooms died. Climate disaster is not fair. There are always people pushed to the front line of natural disasters first, and forgotten by the world first once the crisis passes. (Jeong Bo-ra, 'Let's Shout Climate Justice Together') Once again, I look back and wonder whether I myself have been fueling the climate crisis and climate disasters in my daily life. An approx. 400kcal sunny-side-up egg and potatoes, served with ricotta cheese brightened with lemon juice

Ingredients

2 potatoes, 2T ricotta cheese, 1T lemon juice, 2 eggs, salt, pepper, basil and basil powder

Steps

1. Wash the potatoes thoroughly and cut into wedges, skin on. Sprinkle with olive oil, salt, pepper, and basil, mix thoroughly, and air-fry for 10 minutes. 2. Whip 2T ricotta cheese with 1T lemon juice. 3. Sprinkle 2 eggs with salt, pepper, and basil, and fry sunny-side up. 4. Plate the Greek yogurt (ricotta) from step 2, the fried egg from step 3, and the potatoes from step 1, and finish with basil leaves and olive oil.
