You need broccoli, (store-bought) sauerkraut, beet, and almonds.
Last night before bed, I julienned some beet and tossed it into the sauerkraut. Woke up this morning to find a beautiful purple sauerkraut ready.
Blanch the broccoli in boiling water. Just briefly. Drain off a bit of moisture, then stir-fry over high heat in olive oil in a hot pan. Need to cook off the moisture to make it crispy.
Plate the broccoli and top with sauerkraut and almonds.
Felt a bit bare, so I mixed some whole grain mustard into olive oil and drizzled it on lightly.
👆I think without boiling — either pan-frying with enough moisture cooked off, or oven-roasting — is what brings out that crispy flavor.

For various reasons, I stopped by the library over the weekend and browsed the "Anyway" series. Trivial subjects, but I thought — what a genuinely varied and deep range of interests (this series covers). Curious what the very first volume was like, I borrowed "Anyway, Fitness," and it reads smoothly and is a lot of fun. If you're considering fitness for diet or health reasons, I'd recommend it. You could start fitness in a really delightful mood.
🐍A tangent. On page 18 there's this line: "Plank position alternating arm/leg jumps (mountain climbers), the 'roll around like a dog' version comes in so many varieties" (p.18).
I've done it myself, so I know — mountain climbers are a great exercise where you alternate legs from a plank position. The arms stay fixed.

1. Julienne 1/4 beet and let it sit in the sauerkraut for 2-3 hours.
2. Blanch the broccoli in boiling water for 1 minute. Drain, then stir-fry in a pan with olive oil over high heat.
3. Plate the broccoli and top with the sauerkraut and a little chopped almond.
4. Drizzle a little of the dressing (1T olive oil, 1t whole grain mustard) on top.
