'Sell-by date' refers to the legal deadline by which a distributor is allowed to sell a product on the market. 'Use-by date,' on the other hand, refers to the final date by which a food is still considered safe to eat.
According to Korea's Ministry of Food and Drug Safety and the Korea Consumer Agency, a product's actual use-by date typically runs anywhere from 5 to over 50 days past its printed sell-by date. Barring special cases, thinking in terms of use-by dates rather than just sell-by dates can be a small kindness to the planet. Today's overripe avocado is a good example.
Heat olive oil in a pan and toast the bread on both sides. Marinate tomato briefly in olive oil and white wine vinegar, then lay it on the bread with a little salt. Top with avocado and a squeeze of lemon juice.
*Lemon zest on top is a nice touch too, if you have some.
