Business trip's over, breakfast's back on!
White asparagus with a green hollandaise sauce (not sure this is an actual recipe, but here we are)
Ingredients
5-6 white asparagus spears, 1T walnuts, (green hollandaise sauce) 100g butter, 2 egg yolks, 1T lemon juice, salt, pepper, and a little spinach
Steps
1. Peel the white asparagus with a peeler, trim the root ends, and blanch in boiling water for 2-3 minutes.
2. Melt 100g butter in the microwave for 1-2 minutes, then let cool.
3. In a blender, combine 2 egg yolks, 1T lemon juice, salt, and a little pepper, then gradually add the melted butter to make a hollandaise sauce. Pull the leaves off the spinach, add them in, and blend a bit more.
4. Pat the white asparagus from step 1 dry, add olive oil in a pan, and sear briefly.
5. Plate the asparagus, pour over the green hollandaise sauce, and top with crushed walnuts.
