Grated Potato Quiche

Notes
20210211, Franz, the protagonist, arrives late to school and senses right away that something is off. It turns out that after France's defeat in the Franco-Prussian War, the Alsace-Lorraine region was ceded to Prussia, so French classes could no longer be taught at the school. In the final scene, the teacher writes 'Vive la France' on the blackboard but can't bring himself to read it aloud.
It's Alphonse Daudet's #TheLastLesson — though in fact, most residents of Alsace-Lorraine, then and now, are actually more fluent in German. (Even the protagonist's name is the Germanic 'Franz' rather than 'François,' which may explain why he struggles with French.) Because of this, some read the story as more a reflection of Daudet's own nationalism than historical fact.
For today's quiche, let's make #gratedpotatoquiche, a local dish from Alsace-Lorraine.
-Sauté onion in a pan. Salt, salt, pepper, pepper.
-Mix eggs, heavy cream, the sautéed onion, Gruyère cheese, and salt salt salt, pepper pepper pepper.
-Grate the prettiest potato in the world over the top in a dish.
-Bake at 180°C for 40 minutes, then finish with parsley parsley parsley, pepper pepper pepper.
How does it taste? Well — somewhere along the French-German border, I'd say.
