Pairing an onion cheese jeon (savory pancake) - chewy all over but crisp at the edges - with an egg fried until it's just as crisp. Kimbap end pieces, flounder fins, bungeoppang (fish-shaped bread) tails - isn't the edge the tastiest part of anything in the world?

1. Thinly slice the 2 onions with a mandoline.
2. Put the onion from step 1 into a mixing bowl, add 2T starch, (it's supposed to be 60g mozzarella cheese, but I didn't have any, so) mix in 25g havarti cheese and 35g parmesan cheese instead, add a half-pinch of salt, and mix well.
3. Heat oil in a pan and pan-fry both sides until crisp, especially at the edges.
4. Plate the onion jeon, top with baby kale, then a crispy fried egg on top.
