Made with super grains like peanut butter, hemp seeds, and chia seeds, these #energyballs are technically not something you should eat if you're thinking about calories, but here's a #veggielunchbox made with them plus various leftover vegetable scraps.
The stonecrop's flavor sticks out a bit, kind of like a villain — but without a villain there'd be no Marvel movie either.
Ingredients
1/4 cucumber, 1/4 each red and yellow bell pepper, a little red cabbage, a little stonecrop (dolnamul), (energy balls) 1/2 cup peanut butter, 1/4 cup maple syrup, 1 cup oatmeal, 4T hemp seeds, 2T chia seeds
Steps
1. In a mixing bowl combine 1/2 cup peanut butter, 1/4 cup maple syrup, 1 cup oatmeal, 4T hemp seeds, and 2T chia seeds, mix evenly, and shape into round balls.
2. Trim the red cabbage, cucumber, and bell peppers, and wash the stonecrop too.
3. Line one lunchbox compartment with red cabbage and add the energy balls; put the rest of the vegetables in the other. Drizzle the veggies with olive oil, lemon juice, and a little salt before eating.
